Can guests upload their own photos to the gallery?

Yes. When collaborative uploads are enabled, guests add their phone photos to the same gallery as the photographer selects, either during the event or afterwards.

Those uploads are face-indexed like everything else, so every guest photo becomes findable by selfie search and can appear on a live photo wall.
